Description
The non-alcoholic white wine DC Sauvignon Blanc is made in South Africa by Darling Cellars.
The temperate and cool climate of the West Coast of the African country lends itself to a variety of different microclimates which, along with the different soil types, give rise to unique grapes from which they make even more unique non-alcoholic wines. 95% of their vineyards are non-irrigated (dry land) and about the same percentage of vines are bush (i.e. not trellised) – this is as close as you can get to what nature intended the grapes to be.
Once pressed and destemmed, it is fermented for 14 days at 14-15°C. The grapes and juice are reductively handled to prevent oxidation and preserve the fruity flavour. Maturation: left on lees for 2 months to add complexity. The wine is then dealcoholised using a gently spun cone technology. This is done under vacuum and at a low temperature to ensure the product retains its distinctive body, colour and flavour.
Serving Recommendation
This alcohol-free wine pairs well with most seafood, especially mussels and oysters.
