Description
The non-alcoholic red wine DC Shiraz from South Africa is made by Darling Cellars. The temperate and cool climate of the West Coast along with the different soil types, give rise to unique grapes from which they make even more unique alcohol-free wines. 95% of their vineyards are non-irrigated (dry land) and about the same percentage of vines are bush (i.e. not trellised) – this is as close as you can get to what nature intended the grapes to be.
Once pressed and destemmed, it is fermented for 5-10 days at 20-30°C. Maturation: After malolactic fermentation, the wine is racked into 2nd and 3rd fill barrels and stainless steel tanks with a combination of French and American oak staves for 12 months to add structure and complexity. The wine is then dealcoholised using a gently spun cone technology. This is done under vacuum and at a low temperature to ensure the product retains its wine body, colour and flavour.
Serving Recommendation
A very balanced non-alcoholic red that can be enjoyed with mild curry dishes or a nice slow-cooked beef brisket.
